Kai’s Special Cranberry Sauce

Perfect with Thanksgiving Turkey

  • 1 cup sugar
  • 1⁄3 cup cider vinegar
  • 1⁄3 cup port wine
  • 1⁄3 cup orange marmalade
  • 1⁄3 cup raisins
  • 2 tsp cinnamon
  • 2 tsp Ka‘iulani Exotic Curry Spice
  • 12 oz fresh cranberries

* Make this one day ahead.

Preheat oven to 325° F.

Combine sugar, vinegar, port, marmalade, raisins, cinnamon, Ka‘iulani Exotic Curry in a large bowl; add cranberries and mix. Pour into a baking dish and cover with a lid or foil. Bake for 50 to 60 minutes until cranberries are so%. Let sit for 10 to 15 minutes to thicken slightly.

To make an interesting appetizer: Spread sauce over a small round of Brie and serve with baguettes or crackers. To bake Brie, pre-heat oven to 325°, place Brie on a decorative oven- proof plate and bake 15 to 20 minutes. Some people like Brie’s slightly earthy rind; others do not. If your guests do not, slice off the top before baking.
