Easy Chicken Curry with Kauaʻi Shrimp

A comforting island-style curry featuring tender chicken, sweet Kauaʻi shrimp, creamy coconut milk, and the bold flavors of Kaʻiulani Spices.

  • 5 cups fresh water
  • 5–7 slices fresh ginger
  • 1 tablespoon fresh minced garlic
  • 1 medium onion, chopped
  • 2 medium Yukon Gold potatoes, cut into cubes
  • 1 13.5 oz can coconut milk

Vegetables

  • 1 large red bell pepper, cut into medium cubes
  • 1 large green bell pepper, cut into medium cubes
  • 1 large onion, cut into medium cubes

Garnish

  • Fresh cilantro, chopped
  • Green onions, sliced

Instructions

  1. Season the chicken. Generously coat the chicken with Kaʻiulani Curry Spice and Kaʻiulani Hawaiian Spice. For the best flavor, season several hours ahead or overnight.
  2. Season the shrimp. Toss the thawed Kauaʻi shrimp with Kaʻiulani Hawaiian Spice and set aside while the curry cooks.
  3. Start the curry. In a large pot, combine the water, ginger, minced garlic, chopped onion, and seasoned chicken. Bring to a boil, then reduce to a gentle simmer. Cook for about 30 minutes, or until the chicken is tender.
  4. Add the potatoes. Stir in the Yukon Gold potatoes and coconut milk. Continue simmering until the potatoes are just becoming tender.
  5. Finish the curry. Add the red bell pepper, green bell pepper, cubed onion, and seasoned shrimp. Stir in a handful of chopped cilantro.
  6. Cook gently. Simmer just until the shrimp turn pink and are cooked through. Avoid overcooking, as the shrimp will become tough.
  7. Taste and adjust. Add additional Kaʻiulani Curry Spice or Hawaiian Spice if desired.
  8. Serve. Ladle into bowls or onto a serving platter. Garnish with sliced green onions and extra fresh cilantro. Serve with steamed white rice.
